This combines the best of wintery vegetables: pumpkin, cauliflower, parsnip, carrot and fennel roasted until they’re caramelised and sweet, along with onion, and a little garlic. The veggies are then brought together in our housemade vegetable stock.
It is a hearty, not-quite-smooth soup that both fills and warms you up. A chunk of crusty, buttered bread and you’re done. Or if you want a sophisticated twist, add a blob of basil pesto.
It’s vegetarian, and gluten free.
