We once ordered Massaman curry in a Thai restaurant where there had been a miscommunication in the kitchen. All the chefs had apparently added the sugar. We got beef dessert. It was nasty. Of course after that there was no other option: I decided I had to make my own! (A little issue with relinquishing control that I’m working on…)
This curry starts with a homemade curry paste. It is a mild curry (easy on the chilli), slow cooked until the beef is really tender, with coconut milk and potato. Baby spinach and roast peanuts are added at the end for crunch and colour.
Suitable for a low sodium version. Contains peanuts.
Ingredients: Beef, potato, coconut milk, vegetable stock (housemade), coconut cream, spinach, onion, peanuts, brown sugar, ginger, garlic, lime juice, fish sauce, lemongrass, galangal, cinnamon, star anise, olive oil, kaffir lime leaves, coriander, cumin, cloves, cardamom, pepper, mace, chilli, salt
Low sodium version contains no salt or stock
