I’ve been trying my hardest to work out how we can get more fish into our Dinner on the Table diet, being that it’s really good for us and all (not to mention delicious).
As a child I ate fish cakes relatively often. My childhood version were the stodgy mashed potato and tinned tuna fiesta that could be quite hard to swallow. I do still quite like those ones, I have to admit.
These are nothing like that. I like these much better. Our made from scratch red curry paste, beans, and shallots mixed with boneless fish fillets, and coconut cream. We bake the fish cakes until they’re just cooked. They’re ready for you to reheat in the oven or microwave and you’ll have dinner on the table.
Suitable for a low sodium version. Contains egg.
Ingredients: White fish, green beans, red curry paste (housemade), coconut cream, shallots, egg white
