There is something rather pleasing about an individually portioned dinner. These are a pumpkin-y cousin of the ever popular Spinach, Ricotta and Feta Filo Triangles. It also seems to me that these span the great divide between lunch and dinner: they’re equally good at either meal.
The sage is growing rampant in my veggie bed. And now it’s going in your dinner. Together with roasted pumpkin, onion, ricotta and a little feta it is rolled into meal sized filo triangles (2 triangles per serve).
This vegetarian dinner comes to you ready for approximately 30 minutes in your oven… and you’ll have dinner on the table. You can cook them directly from frozen, no need to defrost.
Ingredients: Pumpkin, ricotta, feta, onion, fresh sage, filo pastry, olive oil, butter, salt, pepper.
