While this dinner is excellent family-friendly freezer-stocking fodder, there are a few things I should like to clear up. Do not freeze the lettuce. Mostly because when you defrost it, it will be yuck.
This is a dinner of minced pork cooked with Asian spices and quickly stir-fried vegies and comes to you ready to heat and pile into a waiting lettuce cup. Blob on some sweet chilli sauce and a little soy and you have a super fast, super delicious dinner.
Alternatively, it makes a really excellent fried rice: hurl into a hot frypan with cooked (and cold) rice, flip about a bit (the fried rice, but you go ahead if you think you’re up to it), add soy and sweet chilli to the pan and you’re done.
