This could almost be a complete meal in itself. Or you can add some salad leaves, an avocado, a blob of sour cream and a tortilla and you’ve pretty much covered every food group. For me, this kind of picking and choosing of bits and pieces to put onto a plate, (or into your favourite flat bread), is eating at its very best.
Chicken strips are quickly cooked with onion, red capsicum, spices, tomato and black beans. Together they make a hearty filling for a tortilla, or eat it as a dish on its own with salad on the side.
