We are now officially in Autumn… which means we can officially eat soup (never stopped us before, but we won’t mention that now).
This soup combines loads of sweet, roasted pumpkin (now you didn’t see that coming, did you?) with a bunch of other veggies (think roasted potato, sweet potato, onion, capsicum) blended together with homemade vegetable stock.
It’s vegetarian, gluten free and ready for warming gently and consuming with a thick slice of crusty bread. Great for a couple of lunches or for a quick dinner.
